Justin’s always teasing Elizabeth if she’ll be our little Rachael Ray. She really enjoys cooking, the more steps the better. This night she was making us chicken roll ups.
Back in college, Justin and I both lived in the, CDV in Auburn. It was apartment like dorms that had full kitchens – far from nice kitchens but a stove and frig none the less. We were always having cook outs and sharing dinners with friends. Gordon lived next door to me and one time made us all chicken roll ups, Justin was a big fan then and I’ve made them from time to time over the past 15 years…wow that statement makes me feel old.
Any way Elizabeth loved making them…you get messy and it has a lot steps, dip, coat, dip, roll. That’s her kind of cooking.
Logan stayed close by for moral support and we all enjoyed her dinner.
Chicken Roll Ups
Chicken tenders or breasts cut into long strips
stick of butter
bread crumbs
egg and milk for wash
block of mozzarella cheese
You melt the butter and then coat all the chicken in butter. Set up a bowl with the egg and milk and then a separate plate with breadcrumbs (I like the Italian ones). Next, you take the chicken, dip it in the egg wash, then bread crumps, then wrap the chicken around a chunk of mozzarella. Repeat for each strip of chicken. Place each roll up in a greased dish and back for around 45min at 350F. Justin prefers it served with rice but it can go with just about anything.

And turn them into new clean chairs like this.
I’m not sure who was more excited about them, me or the kids. We actually had a fight over the one complete chair at breakfast that day! Happy to report we are all sitting on clean chairs now! And maybe now that I learned how easy it is to recover them I’ll have to do it on a more regular basis because kids are pretty rough on them!
We went to the beach to go to the zoo??? Who does that? Justin went finishing so I thought this would be a good alternative to the pool…you can only swim so much or so I thought.
If this little guy got a dollar for everyone that commented on his hair, he’d have a good college fund going!
These tiger cubs where probably the coolest animals they had. For $25 kids can go play with them but there’s a waiting list!
Logan pets the animals only because his bigger sister does.
This little girl LOVES animals of any kind…future vet? Maybe. I hear Auburn has a great vet school!!
Uncle Bry brought this shirt for Logan and while it’s a little big, once he heard it was a “fishing” shirt he had to wear it.
On of the cool parts of this zoo was the ability feed a lot of different animals. Elizabeth loved that…proof, she ran out of food about half way through the park.
It was really HOT! And Logan had had enough about three quarters of the way through…we couldn’t get to the a/c car soon enough.
This year we moved our trip up to the forth of July holiday so we could overlap our visit with a few friends. Justin went to high school with them and as they were talking I reminded them that their freshman year of high school was twenty years ago! Talk about feeling old. Great things have came since then including 9 kids! Baby Kole is sacked out and Sullivan is in the carrier.

I asked Logan to join the picture but you can see he was reluctant. Kade, Hannah and Elizabeth paused long enough for a quick pic.
This is Weslie and Elizabeth absolutely loved going down the slide with her. Weslie is a tiny little girl but has no fear when it comes to the water or slides.

We started vacation off with a little spin in Papa’s new boat.
The kids and “the watermelon” from our back yard. It probably could have gone a few more weeks but we’ve been telling E it was for vacation so we brought it.
And our little watermelon queen has eaten plenty of it!

Elizabeth and Logan are getting pretty good about cheezing it up for a photo though!
After pulling an all nighter the first night of vacation, and many more rough nights, Luke spent the first three days sleeping at the pool. I’m happy to report though, he has slept the last three nights and yesterday was such a happy little kid in the pool, running all around.
